Miracle Muffins Mix - Gingerbread - Make 12/36 muffins - SplendaBy themselves, these are little fiber bullets, but with a few additions, these are really good muffins and extremely healthy. Just add some chopped (candied) ginger, dried pineapple, or other dried fruit...and chop up some almonds (they stay crunchy, while other nuts don't). If you are watching the calories, you won't have too many worries. When I add some chopped fruit and nuts, instead of making only 12, it makes 18.

Great for diabetics or those that need more fiber in their lives.
